
Comfort foods are staples for anyone wanting a hearty meal and a little taste of home and is often characterized by a high carbohydrate level and simple preparation. Pasta is most definitely one of my family’s go to comfort foods.
INGREDIENTS

- 1 lb of linguine
- 4 to 5 boneless skinless chicken breasts or 1 lb of shrimp deveined, cooked, and tails removed
- 1 onion
- 4 garlic cloves, minced
- 2 zucchini
- 1 yellow squash
- 1 lemon zested and juiced
- 2 to 3 cups chicken broth
- 1 can of artichoke hearts drained
- 1 cup feta
- 1/2 cup shredded or shaved Parmesan
- 1 cup kalamata olives pitted and sliced
- 1 cup petite diced tomatoes
- 1/2 flat leaf parsley chopped
- 2 TBS corn starch
- salt & pepper
INSTRUCTIONS

- Cook pasta to al dente, drain and set aside
- Cook chicken, cut into bite size pieces, set aside
- Saute onions, garlic, yellow squash, and zucchini until crisp tender
- Add chicken broth, bring to boil, and thicken with cornstarch and cold water slury
- Add chicken, artichokes, olives, tomatoes, parsley, cheeses, lemon and cook for an additional minute
- Add to pasta and serve
